Curried Chicken & Mango Sandwiches
- 1 of 4 Heat broiler.
- 2 of 4 Heat curry powder in small dry skillet 1 minute, or until fragrant. Add to mayonnaise; reserve half of the curry mayonnaise for bread.
- 3 of 4 Place chicken breasts on oiled broiler-pan rack. Brush half of remaining mayonnaise over chicken. Broil 5 minutes. Turn chicken over; brush with remaining mayonnaise. Broil 5 minutes.
- 4 of 4 Peel and slice 1 mango. Slice chicken crosswise. Spread pumpernickel bread with reserved curry mayonnaise. Assemble sandwiches, dividing chicken and mango evenly.
