Saute chicken in 1 tablespoon oil in skillet 6 minutes, until cooked. Remove. Cook broccoli, carrots, and scallions in remaining oil for 12 minutes.
Add rice, chicken, and soy mixture to skillet. Heat through. Sprinkle with nuts.
