  1. 1 of 3 Heat oil in large nonstick skillet over medium heat. Add green pepper and onion; cook, stirring, for 4 minutes or until softened.
  2. 2 of 3 Add rice mix, tomatoes and the 1-1/4 cups water. Simmer, covered, for 10 minutes.
  3. 3 of 3 Sprinkle chicken with salt. Stir into rice along with beans, olives and pepper sauce; cook, covered, 8 to 10 minutes or until rice is tender. Sprinkle with cilantro if desired. Makes 4 servings.
