Speedy Chicken Scarpariello
- 1 of 4 Heat oil in a large nonstick skillet over medium-high heat. Trim any excess fat from chicken thighs and cut into 1-inch pieces. Season with 1/4 teaspoon each of the salt, Italian seasoning and pepper. Saute for 5 minutes, stirring occasionally.
- 2 of 4 Cut sausage into 1/2-inch pieces. Add to skillet along with the peppers, garlic and potatoes. Stir in the remaining 1/2 teaspoon salt, 1/2 teaspoon Italian seasoning and 1/4 teaspoon pepper. Add the Italian dressing and stir to combine.
- 3 of 4 Cover skillet and cook over medium-high heat for 15 minutes, stirring occasionally.
- 4 of 4 Remove skillet from heat and let rest 5 minutes before serving. Makes 6 servings.
