• Season chicken with salt and pepper. Heat butter in a 12-inch skillet over high heat until melted and slightly brown. Add the chicken, and cook 3 minutes on each side.

  • Meanwhile, crisp bacon in microwave as package directs.

  • Remove skillet from heat; place chicken on a cutting board. Spread each cutlet with 1 teaspoon honey-Dijon mustard. Then top each cutlet with 2 slices bacon and 1 folded slice Swiss cheese. Reduce heat to medium and return pan to burner. Carefully add chicken to the pan, and cover. Cook 3 to 4 minutes or until chicken is no longer pink and cheese is melted. Serve with onion rings on the side. Makes 4 servings.
