Thai Chicken & Vegetable Curry
- 1 of 4 Cut chicken into 3/4-inch cubes; toss chicken evenly with curry powder.
- 2 of 4 Heat oil in large skillet; add chicken. Cook and stir over medium-high heat for 3 minutes.
- 3 of 4 Add undrained tomatoes, beans, carrots and crushed red pepper. Simmer, uncovered, 5 minutes.
- 4 of 4 Serve over rice and sprinkle with 1/4 cup peanuts or toasted coconut, if desired.
