• Cook couscous as per pkg instructions. Keep warm. Heat oil in a large lidded skillet over med-high. Add garam masala to pan and cook 1 min. Stir in 3 apricots and 1/2 cup water; cover and cook 4 min to plump apricots. Open chickpeas and drain and rinse one of the cans; add both to pan along with lemon zest, parsley, 2 tbsp lemon juice and salt. Cook 3 min on high until thickened slightly. Serve over couscous.
