Chile-Cheddar Mashed Potatoes
- 1 of 2 Place diced potatoes and garlic in a lidded pot. Fill with cold water until potatoes are covered by 1 inch. Cover pot and bring to a boil. Reduce heat to a simmer and cook 10 minutes, until fork-tender.
- 2 of 2 Drain potatoes and immediately return to pot. Stir in milk and butter; mash until smooth. Stir in cheese, chiles and salt.
