Royal Icing with Luster Dust


  • Place chocolate in a small microwave-safe bowl. Microwave at 50% for 1 min, stirring once halfway through. Stir until smooth and melted. Let cool 5 min.

  • Meanwhile, combine butter and sugar in a mixer bowl; beat until light and fluffy, about 3 min. Add 3 tbsp water, egg, corn syrup and vanilla; beat until well combined. Scrape down sides of bowl. With mixer on low, add flour, cocoa and salt; beat until combined. Stir in melted chocolate and mix until well blended.

  • Divide dough into 2 disks, wrap in plastic and refrigerate 1 hr or up to 2 days.

  • Heat oven to 350 degrees. Line baking sheets with parchment. On a sheet of wax paper, roll dough to 1/8- to 1/4-inch thickness. Cut into 6- or 7-inch circles, using a salad plate as a guide (or click here to make your own template). Place on prepared baking sheets, 1 inch apart, and bake until edges are just lightly browned, about 14 min. Cool on baking sheet for 2 min. Transfer cookies to a wire rack and cool completely. Repeat with any remaining dough. Follow directions below for icing and decorating. Make 'em Mini: Go with a 2-inch cookie cutter. Opt for simple decorations - otherwise, they may look super busy.

Royal Icing with Luster Dust

  • Place confectioners' sugar and meringue powder in a standing mixer bowl. Beat in 1/4 cup water; increase speed to high and beat until stiff peaks form, about 3 min. Add 2 tbsp water and beat until light and fluffy.

  • To decorate, dilute icing with 1 tbsp water at a time until it has the consistency of thick heavy cream. Spread 1 to 2 tbsp icing over each cooled cookie with an offset spatula. Let dry at least 3 hr or overnight.

  • Paint with luster dust: For each color, mix dust with 1 tsp lemon extract until smooth. Brush over dry iced cookies; let each color dry before brushing on more luster dust.
