  1. 1 of 1 Remove casing and finely dice 4 oz Spanish-style cured chorizo. Saute over medium for 3 to 5 minutes, until slightly crispy. Meanwhile, in a bowl, mash 3 peeled and pitted avocados. Fold in chorizo, 1/2 cup diced cherry tomatoes, 1/3 cup chopped parsley, 2 tbsp lime juice and 3/4 tsp kosher salt.
