Whisk eggs with salt and pour into pan, stirring until scrambled. Divide mixture among tortillas, and top each with 1 tbsp cheddar. Roll tightly and freeze in a resealable plastic bag.
When reheating, wrap in a damp paper towel and microwave 2 minutes. Serve with sour cream and salsa.
