• Cook sausage in oil over medium-high, breaking up with a spoon, until browned, 5 to 7 minutes. Stir in tomato and scallions. Cook 1 minute, scraping bottom of pan.

  • Whisk eggs with salt and pour into pan, stirring until scrambled. Divide mixture among tortillas, and top each with 1 tbsp cheddar. Roll tightly and freeze in a resealable plastic bag.

  • When reheating, wrap in a damp paper towel and microwave 2 minutes. Serve with sour cream and salsa.
