Cinnamon-Apple Waffles a la Mode
- 1 of 4 Combine flour and next 4 ingredients. In a large bowl, whisk egg yolks, milk and oil. Blend into flour mixture. Beat egg whites to soft peaks and fold into batter. Gently fold in shredded apple.
- 2 of 4 Heat a waffle iron. Ladle batter into waffle iron, about 1/2 cup per waffle. Cook according to manufacturer's instructions, 4 to 5 minutes per waffle. Repeat with remaining batter. (Makes about 6 standard-size waffles.)
- 3 of 4 Meanwhile, saute apple cubes in butter over medium-high for 3 minutes, until browned.
- 4 of 4 Top each waffle with 3 small scoops ice cream, about 2/3 cup total per waffle, and some caramelized apples.
