Citrus Sweet Potatoes

Directions

  1. 1 of 1 Cut rind from 2 grapefruits and 2 navel oranges. Separate fruit into sections and reserve. In a large skillet over medium, melt 1 stick (1/2 cup) unsalted butter and 1/4 cup each honey and sugar. Cook 5 minutes, until light brown. Add 5 lbs peeled sweet potatoes cut into 2-inch pieces, 1 cup orange juice and 1 tsp salt. Cover and simmer over medium-low for 22 to 25 minutes, until tender. Uncover and cook 3 minutes, until a thick glaze forms. Add fruit sections and 2 tsp lime zest.
