Citrusy Green Beans and Fennel

  1. 1 of 1 Heat 2 tbsp extra-virgin olive oil in a large skillet over medium-high. Add 1 lb green beans, trimmed and sliced on the bias into 2-inch pieces. Saute 2 minutes. Add 2 more tbsp extra-virgin olive oil and 1 medium fennel bulb, cored and thinly sliced (fronds reserved). Saute 5 minutes, stirring occasionally. Stir in reserved fronds, 2 segmented navel oranges, 3 tbsp tarragon vinegar, 1 tbsp chopped fresh tarragon, 2 tsp orange zest, 1 tsp salt and 1/2 tsp black pepper.
