  • Heat oven to 350°. Line 2 baking sheets with parchment paper and coat paper with cooking spray. Coat 8 small bowls or measuring cups with cooking spray. Separate eggs, placing whites together in a large bowl and each yolk carefully in a coated bowl.

  • With an electric mixer on high speed, beat whites to stiff peaks, 3 to 4 minutes. Working quickly, scoop 8 even mounds of meringue onto baking sheets (4 per sheet). Shape mounds into rough circles and make an indent in center of each to create a nest.

  • Add yolks to nests and bake 14 minutes, rotating sheets from top to bottom halfway through.

  • Add a pinch of salt to each yolk. Sprinkle with chives and top with freshly ground black pepper.
