Cocoa-Coconut Almond Energy Balls

  1. 1 of 2 In a large bowl, stir first 7 ingredients with 1/2 cup finely shredded coconut. Continue mixing ingredients until dough comes together. Wrap and refrigerate 30 min.
  2. 2 of 2 Form into balls (1 tbsp each), then roll balls in more finely shredded coconut to coat. Makes about 20 balls. Tip: A pair of thin vinyl or latex gloves will help the dough stick to itself, not your hands. You may need to compress the dough so that balls hold together.
