  1. 1 of 1 Place tofu on a paper-towel-lined plate; top with more paper towels and a second plate. Let stand 10 min. Meanwhile, heat veg oil in a large skillet over medium. Add onion; cook 5 min. Add curry paste; cook 1 min. Add bok choy; cook 3 min. Stir in coconut milk. Dice tofu, season with 1/4 tsp salt and add to pan; cover and cook 3 min. Season with 1/4 tsp salt. Serve over cooked rice with lime wedges.
