Oatmeal Chocolate Chip Cookies
These chewy oatmeal cookies are full of chopped prunes and walnuts as well as chocolate chips. Add a couple to a lunch box for a special treat.

  1. 1 of 5 Heat oven to 375 F.
  2. 2 of 5 In a large bowl, whisk flour, baking powder, baking soda and salt. Set aside.
  3. 3 of 5 In a second large bowl, cream butter. Add both sugars; beat until fluffy. Beat in vanilla and egg. Add flour mixture and mix well. Stir in oats, prunes, nuts and chips.
  4. 4 of 5 Drop dough by rounded tablespoons onto ungreased cookie sheets. Bake at 375 F for 15 minutes or until lightly browned around the edges. Allow to cool completely on wire racks. Repeat with remaining dough.
  5. 5 of 5 Dust cooled cookies with confectioners' sugar, if desired.
