  1. 1 of 3 To basic sugar cookie dough, add 1 tablespoon grated orange zest and 1/2 teaspoon orange extract. Divide into 2 disks and refrigerate 4 hours.
  2. 2 of 3 On lightly floured work surface, roll out one disk to 3/16-inch thickness. Cut into rounds using a 2-inch cutter. Place on ungreased baking sheet. Bake at 350 degrees F for 12 minutes until lightly golden around edges. Remove cookies to wire rack to cool completely. Repeat with remaining dough. Gather scraps and refrigerate. Reroll, cut into additional rounds and bake as above.
  3. 3 of 3 Spread half of the rounds with 1 teaspoon orange marmalade each. Place remaining rounds over marmalade to form a sandwich. Melt 1 cup semisweet chocolate chips. Dip one side of sandwiches in chocolate; place on a parchment or waxed paper-lined baking sheet. Allow chocolate to set at room temperature.
