• Line a large baking sheet with foil; coat with nonstick spray. Spread chicken cutlets on foil. Fold provolone cheese into quarters. Wrap each piece of cheese in one piece of ham to enclose. Place each ham packet on one half of a chicken cutlet. Fold other half over ham to enclose; sprinkle with salt and pepper. Spread each with 1 tsp Dijon mustard and top each with 2 tsp bread crumbs. Bake at 450° for 15 min, then broil 1 to 2 min until lightly browned on top. Serve with green salad on the side.
