• Heat oven to 350°. Coat a 2-quart baking dish with cooking spray. Cook bacon in a skillet until crisp, about 5 minutes. Transfer to a paper-towel-lined plate, then crumble.

  • In a large bowl, whisk eggs, heavy cream, cornstarch, sugar, salt and cayenne. Stir in crumbled bacon, scallions, corn kernels and creamed corn.

  • Pour into prepared pan and top with shredded cheddar. Bake until golden and a knife inserted in top comes out clean, about 50 minutes. Let stand 10 minutes.
