  1. 1 of 1 In a medium saucepan, heat 2 tbsp vegetable oil over medium-high. Add 1/2 chopped red onion, 2 cloves chopped garlic and 2 tbsp chopped ginger; cook 2 minutes. Add 1 pkg (12 oz) fresh cranberries, 1 can (15 oz) drained mandarin oranges, 1 cup packed brown sugar, 1/3 cup red wine vinegar, 1/2 tsp each salt and chipotle chile powder and 1 cinnamon stick. Cook 13 minutes, stirring occasionally, until cranberries are softened.
