Creamed Collard Greens



  1. 1 of 2 In a pot of salted boiling water, cook collard greens 3 minutes. Drain and press out most of the liquid. In a large skillet, melt butter; add shallots and garlic. Stir in flour; cook 1 minute.
  2. 2 of 2 Whisk in milk, salt, ground nutmeg and black pepper. Bring to a simmer and cook 2 minutes, until thickened. Stir in collards.
