  1. 1 of 1 Drain and press liquid from 3 boxes (10 oz each) thawed frozen spinach leaves; set aside. In a large skillet, melt 6 tbsp unsalted butter. Whisk in 3 tbsp all-purpose flour; cook 1 minute. Stir in 1 diced small yellow onion and 3 cloves chopped garlic; cook 3 minutes. Whisk in 3 cups milk; bring to a simmer and cook 5 minutes, until thickened. Whisk in 1/4 cup grated Parmesan, 3/4 tsp salt, 1/2 tsp freshly cracked black pepper and 1/4 tsp ground nutmeg, then stir in spinach until combined and warm.
