  • Heat oil over med-high in a large nonstick skillet. Add meatloaf mix, breaking apart with a spoon, and brown about 5 min. Add onion; cook 3 min. Stir in raisins, tomato paste, cinnamon and salt and cook 2 min. Add olives and 1/4 cup water. Cover and cook 3 min. Serve with yellow rice on the side, if desired.
