Directions

  1. 1 of 1 Spiral slice 2 seedless cucumbers through the thickest spiralizer blade (using kitchen scissors, snip through strands every 6 inches). Place between paper towels to remove excess liquid. Meanwhile, whisk 1/2 cup plain Greek yogurt, 1/4 cup white vinegar, 2 tbsp chopped dill, 2 tsp sugar and 1/2 tsp each salt and pepper. In a large bowl, combine cucumbers, 3/4 lb cooked shrimp, 1 cup halved cherry tomatoes and 1/2 cup crumbled feta cheese. Gently toss salad with 1/2 cup dressing. Serve extra dressing on the side.
