- 1 of 1 Combine 1 tbsp each curry powder and sugar, 1 1/2 tsp salt, 1 tsp each ground cumin, turmeric and ground ginger and 1/2 tsp black pepper. Heat 3 tbsp oil in a large stainless skillet over medium. Add 1 sliced onion and 2 chopped cloves garlic. Cook 3 minutes. Add spice mixture and cook 1 minute. Stir in 1 1/4 lbs ground beef and cook 5 minutes, stirring occasionally. Mix in 4 cups cauliflower florets, 1 large peeled and diced potato (scant 2 cups), 1 cup vegetable broth and 3/4 cup golden raisins. Cover and cook 25 minutes, stirring halfway. Uncover and stir in 1 cup thawed frozen peas. Top with chopped cilantro and serve over cooked couscous.
