  • Combine chicken, cilantro, currants, scallions, curry powder, salt and cayenne. Form into 12 meatballs and place on a foil-lined baking sheet coated with nonstick cooking spray. Bake at 400° for 12 minutes. Serve with rice, chutney, yogurt and a side of bok choy.
