Curried Rice and Shrimp
- 1 of 1 Heat butter in a large skillet. Add rice, scallions and garlic; cook 3 minutes. Stir in curry powder and cook 1 minute. Add broth, peas, broccoli, salt and pepper. Bring to a simmer. Add to a large casserole and bake at 350 degrees , covered, for 35 minutes. Add shrimp and bake, covered, an additional 15 minutes. Squeeze lemon over shrimp.
