  1. 1 of 1 In a large stainless skillet, melt 2 tbsp butter. Add 2 sliced medium onions and cook over medium for 10 minutes, stirring occasionally. Sprinkle with salt. Meanwhile, shape 1 1/4 lbs ground beef into 4 oval patties. Season liberally with salt and pepper. Remove onions to a bowl; increase heat under skillet to medium-high. Add beef patties and cook 6 to 8 minutes, turning once. Divide onions among 4 slices marbled or regular rye bread. Top each with a patty and a slice of cheddar. Spread 4 more slices rye bread with 1 tbsp softened butter and stack on sandwiches. Carefully flip over and spread bottom slices of bread with another 1 tbsp softened butter. Heat a large nonstick skillet over medium-high. Add sandwiches and cook 2 minutes on each side.
