Dirty Rice-Style Barley

Makes 4



  1. 1 of 3 Bring barley, salt and 1/2 tsp Cajun seasoning and 3 cups water to a boil, then simmer 45 to 60 min. Meanwhile, chop onion, bell pepper and celery.
  2. 2 of 3 When barley has cooked for 40 min, cook sausage in a large pot over medium for 5 min, stirring to break up. Add onion, red pepper and celery to pot and cook, stirring occasionally, 15 min.
  3. 3 of 3 Stir in cooked barley and 1 tsp Cajun seasoning. Serve topped with celery leaves.
