  1. 1 of 1 Cook manicotti shells following pkg directions (about 8 minutes). In a large bowl, combine ricotta, spinach, 1/2 cup mozzarella, 1/3 cup Parmesan, eggs, basil, salt, pepper, nutmeg and cayenne. Combine marinara sauce and water; spread 1/2 cup in bottom of a 13 x 9 x 2-inch baking dish. Fill manicotti shells with ricotta mixture and place in baking dish. Spoon remaining marinara over top; sprinkle with 1 cup mozzarella and 2 tbsp Parmesan. Cover and bake at 400 degrees for 30 minutes. Uncover and bake 10 minutes more. Serve with Sauteed Escarole, if desired.
