Egg and Avocado Toasts

  1. 1 of 1 Peel and pit 2 ripe avocados; smash with a fork in a bowl. Fold in 1/4 cup crumbled goat cheese, 1 tbsp lime juice and 1/4 tsp each salt and black pepper. Spread onto 4 slices toasted seeded whole-grain bread. Slice 3 hard-boiled eggs into 4 wedges each. Arrange over avocado spread. Scatter 2 tbsp crumbled goat cheese over toasts, then season with 1/4 tsp salt and 1/8 tsp black pepper.

Make the perfect hard-boiled eggs:

  1. 1 of 1 Place eggs in a pot in a single layer. Add enough cold water to cover by 2 inches. Bring to a boil. Cover and remove from heat. Let sit 10 minutes, then drain and cool completely under cold running water. Refrigerate until using.
