  • Heat tablespoon butter in nonstick skillet; sauté onion and peppers for 8 minutes to soften. Add potato; cook 5 minutes. Transfer to bowl.

  • Whisk eggs, egg whites, salt and pepper in clean bowl. Heat remaining butter in skillet. Add eggs; cook until almost set, stirring occasionally, 2 minutes. Stir in peppers, potato. Makes 6 servings.
