  • Cut eggplants and zucchini into 1/4-inch planks. Halve tomatoes. Cut onion into wedges and red peppers into large strips. Brush veggies with 3 tbsp oil; season with salt and pepper. Grill in 2 batches, 4 minutes per side. Coarsely chop veggies and stir into linguine. Add basil, vinegar and beans. Drizzle with 1 tbsp oil.
