  1. 1 of 1 In a large pot, heat 3 tbsp extra-virgin olive oil over medium-high. Stir in 2 large pkg (1 lb each) baby spinach, 3 tbsp fresh lemon juice, 1 tbsp lemon zest, 1/2 tsp salt and 1/4 tsp black pepper. Stir until wilted, 2 to 3 minutes. Remove with a slotted spoon.
