  1. 1 of 1 Toss together first 5 ingredients. Whisk mayonnaise and vinegar and fold into cabbage mixture. Season with salt and pepper; refrigerate.

Sandwiches

  1. 1 of 3 In a bowl, combine first 4 ingredients. Pour buttermilk into another bowl. Trim excess fat from chicken. Coat chicken with flour mixture, dip in buttermilk (allowing excess to drip off) and coat again with flour mixture. Place on a baking sheet fitted with a wire rack.
  2. 2 of 3 In a deep, heavy skillet, heat oil to 350 degrees . Add 2 pieces of chicken. Cook 4 minutes, turn and cook another 4 minutes, until cooked through. Transfer to a paper-towel-lined plate and repeat with remaining chicken.
  3. 3 of 3 Spread each roll with some mayonnaise. Top with a piece of chicken, some slaw and a few pickled jalapenos.
