  1. 1 of 4 Heat oven to 350 degrees . In a food processor, pulse graham crackers and 3 tbsp sugar until fine crumbs form. Pour in melted butter and combine until well blended. Transfer to a rimmed 15 x 10-inch sheet pan. Using the bottom of a measuring cup, press firmly into bottom and up sides of pan. Bake for 15 minutes. Remove from oven and cool 15 minutes.
  2. 2 of 4 In a bowl, combine 2/3 cup flour, the oats, brown sugar, crystallized ginger and 1/4 tsp salt. Mix in cubed butter with your hands, breaking up into pea-sized pieces. Set aside.
  3. 3 of 4 In a separate bowl, gently toss pears, 2/3 cup granulated sugar, fresh ginger, 1/3 cup flour, lemon juice and 1/4 tsp salt. Spread into crust. Scatter on crumb topping.
  4. 4 of 4 Bake 40 to 45 minutes, until topping is browned and pie is bubbling. Cool at least 1 hour before slicing. Serve with ice cream, if desired.
