Gnocchi, Peas and Prosciutto

Heat oil in a large skillet over medium heat. Add prosciutto and cook 3 to 5 minutes, until crispy. Add heavy cream, bring to a simmer and cook 1 minute, until slightly thickened. Stir in Parmesan, salt and pepper.
Add gnocchi and peas to water; cook 2 minutes. Drain and add to cream sauce. Return to a simmer and toss to coat. Sprinkle with more Parmesan.
