Gochujang-Glazed Spare Ribs

Korean-style ribs are pretty similar to traditional baby backs, but with a little more heat from the chile paste.

  1. 1 of 7 Heat grill to medium.
  2. 2 of 7 Cut rack in half. Combine salt and sugar. Sprinkle over ribs.
  3. 3 of 7 Whisk remaining ingredients.
  4. 4 of 7 Using 4 sheets of heavy-duty aluminum foil, double wrap each rack in its own packet.
  5. 5 of 7 Place ribs on grill over direct heat and cook 1 hour with lid closed, occasionally turning packets without piercing foil.
  6. 6 of 7 Remove from grill; rest 10 minutes. Carefully open packets, remove ribs and discard rendered fat and foil.
  7. 7 of 7 Grill ribs over direct heat, with lid closed as much as possible, turning and basting with sauce until nicely charred, 10 to 12 minutes. Remove from grill; rest about 5 minutes. Cut into individual ribs and serve with any remaining sauce.
