  • Whisk together all ingredients in a small mixing bowl. Taste and adjust seasoning as necessary, adding a little more lemon juice if required.

  • Toast walnuts in a dry frying pan over medium for 2 to 3 min, until golden.

  • Put shredded lettuce leaves in a large mixing bowl and add shrimp, celery, apple and grapes. Spoon in dressing and toss to coat. Taste and adjust seasoning as necessary before serving. To devein, use a paring knife to slice along the back curve of the shrimp. Then use the knife tip to pry out the dark, sandy vein and discard it.
