  1. 1 of 1 Heat oven to 350 degrees . In a 9-inch cake pan, melt 1/4 cup unsalted butter in oven; sprinkle 1/4 cup brown sugar evenly over butter. Peel and thinly slice 2 pink grapefruit; fan over bottom of pan. Combine 1 1/2 cups Bisquick, 1/2 cup sugar, 1/3 cup milk, 1/4 cup mascarpone cheese, 1 egg, 2 tbsp vegetable oil and 1 tsp vanilla extract. Beat on low to combine, then on medium for 4 minutes, occasionally scraping down sides of bowl. Pour over grapefruit. Bake 40 minutes or until toothpick inserted in center comes out clean. Turn out onto a serving plate. Leave pan in place a few minutes so that sugar mixture drizzles over cake. Remove pan and cool 15 minutes.
