  1. 1 of 3 Heat oven to 375 degrees . Line an 8 1/2 x 4 1/2-inch loaf pan with foil. In a large stainless skillet, heat oil over medium-high. Add mushrooms and cook 4 minutes. Stir in spinach and cook 3 minutes. Remove from heat and add Alfredo sauce, 1/4 cup basil and 1/4 tsp pepper.
  2. 2 of 3 In a bowl, stir ricotta, egg yolk, 3 tbsp Parmesan and 1/4 tsp pepper.
  3. 3 of 3 Spoon 1/4 cup spinach sauce into bottom of foil-lined pan. Top with a noodle, a third of the spinach sauce and 2 slices mozzarella. Follow with a noodle, half the ricotta mixture and another noodle. Spread with a third of the sauce and top with a noodle. Continue layering with remaining ricotta mixture, noodle, spinach sauce, basil and mozzarella. Sprinkle with 1 tbsp Parmesan and cover with foil. Bake 20 minutes. Uncover and bake 10 minutes. Cool 10 minutes and serve with a green salad.
