Green Curry Chicken and Potatoes

Place chicken, onion and potatoes in slow cooker. Combine coconut milk, 3 tbsp of the curry paste, the soy sauce and sugar. Pour over chicken and potatoes.
Cover and cook on HIGH for 6 hours. Stir in remaining 2 tbsp curry paste and scatter red pepper over the top during last 30 minutes of cooking.
To serve, stir in cilantro and lime juice. Spoon over rice and garnish with Thai basil, if desired. Squeeze lime wedges over top.
For easy cleanup:
Line your slow cooker with a disposable slow cooker liner. Add ingredients as directed in recipe. Once your dish is finished cooking, spoon the food out of your slow cooker and simply dispose of the liner. Do not lift or transport the disposable liner with food inside.
