Green Eggs and Ham
- 1 of 1 Heat grill to medium-high. Trim 1 lb asparagus; toss with 1 tsp olive oil and sprinkle with 1/4 tsp salt and some freshly ground black pepper. Add asparagus to grill, along with 1 trimmed bunch scallions. Grill 10 minutes, turning frequently, until just tender. Remove to a cutting board and chop. Place an 11-inch cast-iron skillet on one side of grill grate. Whisk 8 large eggs, 2 tbsp chopped fresh dill, 1/4 tsp salt and freshly ground black pepper in a bowl. Add 2 tsp oil to skillet and stir in egg mixture and chopped grilled veggies. Grill, stirring, 5 minutes. Meanwhile, grill 4 slices sourdough and 8 slices breakfast ham or Canadian bacon until well marked, about 1 to 2 minutes per side. Sprinkle 3/4 cup shredded white cheddar over eggs and fold in to combine. Place bread on plates; top with ham and eggs.
