Grilled Chicken Club Pasta Salad
Heat grill or grill pan to medium-high. Coat chicken and onion with 1 tbsp oil; season with 1/4 tsp each salt and pepper. Grill both 12 minutes, turning once, or until onion is tender and chicken is cooked through. Cool slightly and cut both into 1/2-inch pieces.Advertisement
Meanwhile, cook pasta per package directions (about 9 minutes); drain.
In a large serving bowl, combine pasta, chicken, onion, tomatoes, bacon, ham and cheddar. In a small bowl, whisk vinegar, mustard, 1/2 tsp salt and 1/4 tsp pepper. While whisking, add 1/4 cup olive oil in a thin stream. Gently stir into pasta mixture and serve.
