  • Heat grill to high and brush with veg oil. Grill bread 2 to 3 min per side. Let slices cool; cut into 1-inch cubes. Rinse, dry and grill Halloumi until well marked on one side, 1 1/2 to 2 min. (You'll have to work quickly with the cheese. Test a slice first to see how long to grill it.)

  • Cut the tomatoes into wedges; place in a large bowl and sprinkle with 1/4 tsp salt. Add arugula to tomatoes. Toss with vinegar, EVOO and 1/4 tsp salt. Add bread and Halloumi; toss to combine. Handheld Dinner: To make this salad into a sandwich, thinly slice the tomatoes and layer everything on the grilled sourdough.
