  • Heat grill to medium-high. Whisk 4 tbsp oil, egg yolk, lemon juice, 2 tbsp Parmesan, anchovies, garlic, mustard, 1/4 tsp salt and 1/4 tsp pepper until well blended.

  • Brush 1 tbsp oil on ciabatta and grill 2 minutes per side; cut into cubes. Season steaks with 1/2 tsp salt and 1/4 tsp pepper. Grill 5 to 6 minutes per side or until steaks are medium-rare. Let rest 5 minutes.

  • While steak is resting, grill romaine 1 minute per side, turning 3 times, for a total of 4 minutes.

  • Scatter ciabatta croutons over romaine and drizzle with dressing. Serve with sliced steak.

Tips

Don't want to open an entire tin of anchovies? Use the paste; it lasts in the fridge for months.
