  1. 1 of 1 Heat grill to medium-high. Peel and pit a ripe avocado and add to a mini chopper or small blender with 1/4 cup sour cream, 1 tbsp lime juice and a pinch of salt. Puree until smooth. Cut 2 sweet red peppers and 1 green bell pepper into planks. Cut 1 large sweet onion into 1/2-inch-thick rounds. Grill veggies for 10 minutes, turning often, until crisp-tender. Transfer to a cutting board and cut into strips. Toss 1 lb peeled tail-on shrimp with 1/2 tsp each dried oregano, garlic powder, chili powder and salt and 1/4 tsp black pepper. Heat an 11-inch cast-iron skillet on grill. Add 1 tbsp oil and shrimp. Cook 2 minutes. Add veggies and 1/4 cup salsa. Cook 2 minutes, add a dash of hot sauce and remove from heat. Add 6 flour tortillas to grill; cook 2 minutes, turning once. Repeat with 6 more flour tortillas. Serve shrimp mixture with tortillas, avocado cream and more salsa.
