  1. 1 of 1 Scrub 2 lbs assorted new potatoes. With a paring knife, cut 5 thin slits into each potato (stopping before reaching bottom). Thinly slice 10 large cloves garlic and fit slices into slits in potatoes. (This can be done up to 2 days ahead; store in fridge.) Place on a large baking sheet and drizzle with 3 tbsp extra-virgin olive oil. Season with 1/2 tsp salt and 1/4 tsp black pepper. Spread out on sheet and roast at 400 degrees for 15 minutes. Gently turn and roast another 15 minutes, until tender. Drizzle with 2 tsp extra-virgin olive oil and sprinkle with 1 tsp chopped fresh thyme. These can be baked ahead; reheat at 375 degrees for 15 minutes.
